Cornbread Pudding is a creamy side dish with sweet corn mixed into a cornbread-like batter. It's super easy to throw together and is a must at any holiday gathering!
- 2 eggs
- 1 cup sour cream
- ½ cup butter melted
- One 15.25 ounce can whole kernel corn drained
- One 14.75 ounce can creamed corn
- One 8.5 ounce box cornbread mix
Grease a 3-qt casserole dish with cooking spray and preheat oven to 350°F.
In a large bowl, combine the eggs, sour cream, melted butter and both cans of corn.
Stir in the cornbread mix, then pour mixture into the prepared casserole dish.
Bake for 40-45 minutes; serve warm.
