One Pot Cajun Chicken Pasta

This easy One Pot Cajun Chicken Pasta is creamy, a bit spicy and packed with flavor, making it a perfect weeknight meal!

Equipment

  • Large Skillet or Pot

Ingredients
  

  • 1 large bell pepper, sliced red, yellow or green (about 1 cup sliced)
  • 1 pound chicken breasts thinly sliced
  • One 13.5 ounce package smoked andouille sausage sliced
  • One 14.5 ounce can fire-roasted diced tomatoes drained
  • 3 cups low sodium chicken broth
  • 1 tablespoon cajun seasoning
  • 1 teaspoon paprika I prefer smoked paprika
  • 1 teaspoon garlic powder
  • 8 ounces dry fettuccini pasta
  • 4 ounces cream cheese
  • ½ cup half and half or heavy cream

Instructions
 

  • Coat a large skillet or Dutch oven with cooking spray.
  • Place the skillet over medium-high heat and add the sliced peppers, sliced chicken, and sliced sausage coins.
  • Cook, stirring occasionally, until the chicken is fully cooked and the peppers are a bit softened.
  • Add the drained diced tomatoes, chicken broth, cajun seasoning, paprika, garlic powder and fettuccini pasta; stir.
  • Bring the mixture to a boil, stirring frequently so the noodles don't stick together, and continue to boil on medium heat for about 15 minutes, or until noodles are tender and most of the liquid has been soaked up.
  • Stir in the cream cheese and half and half until smooth.
  • Enjoy warm!

Notes

If it's still a little soupy before you add the cream cheese and ½ & ½, you can continue to cook it a little longer so some of the excess moisture will evaporate.  OR, you can use a metal measuring cup and carefully scoop a little bit of the juice out.  However, I recommend you keep that extra juice as the pasta really thickens as it cools and you might feel inclined to add it back! :)
