Season pork chops with salt and pepper (or seasoning of choice).
Place butter and olive oil in skillet and turn the burner on medium/high. Once the butter is melted and the pan is hot, add the pork chops.
Cook uncovered for 4 minutes.
Flip the pork chops, cover, and reduce heat to low/medium.
Cook for 5 minutes and check the temperature by placing the probe in the middle of the chop, making sure it's not touching the pan.
The pork chops are done cooking once they are 145 F. If they haven't reached that point, continue to cook in one minute intervals, temping after each one.
Once the chops have reached 145 F, remove them from the skillet and place on a plate. Let rest for 3 minutes before slicing.
