Preheat oven to 350°F and spray a 9x13 baking dish with cooking spray.
Cook egg noodles according to package instructions; drain and set aside.
In a large skillet over medium-high heat, add the vegetable oil.
Sauté the onion and garlic for 3-5 minutes, or until softened.
Add the ground beef and cook until browned.
Stir in the marinara and diced tomatoes; set aside.
In a large bowl, stir together the cottage cheese, egg, grated parmesan cheese, Italian seasoning and 1 cup of mozzarella cheese.
Stir in the egg noodles.
Spread half of the noodle mixture into the pan and top with half of the sauce; repeat.
Top with remaining mozzarella cheese and cover with foil.
Bake for 35 minutes with the foil and an additional 5 minutes without.
Sprinkle with parsley, if desired.
