Chocolate Cobbler for Two

This rich and fudgy Chocolate Cobbler for Two is the perfect quick, easy microwave dessert! It's truly decadent and completely irresistible with a scoop of ice cream!

Ingredients
  

  • 1/3 c flour
  • 3/4 tsp baking powder
  • 1/8 tsp salt
  • 1/4 c sugar
  • 2 tsp cocoa powder
  • 1 tbsp vegetable oil
  • 2 1/2 tbsp milk

Topping

  • 2 tbsp sugar
  • 3 tbsp brown sugar
  • pinch salt
  • 1 tsp cocoa powder
  • 1/3 c boiling water

Instructions
 

  • In a microwave-safe dish (needs to hold at least 6 cups), combine the flour, baking powder, salt, sugar, cocoa, oil and milk; set aside.
  • In a small mixing bowl, combine all topping ingredients except the boiling water.
  • Sprinkle the topping mixture over the batter; do NOT stir.
  • Pour the boiling water on top; again, do NOT stir.
  • Microwave on high for 2 1/2 - 3 minutes* (microwaves vary greatly) OR bake in a 350°F oven or toaster oven for 15 minutes.
  • Enjoy warm with ice cream, if desired.

Notes

*If you've made my Chocolate Cobbler, please know that this will be a slightly different texture due to the fact that it's cooked in the microwave.  Portions of the cake will rise to the top, but some fudge will set on top.  (I actually really liked the extra fudgy texture of the microwave version!!)
