Pumpkin Baked Oatmeal

Pumpkin Baked Oatmeal is nutritious, flavorful and will keep you satisfied for hours. Top with pecans and maple syrup for a yummy breakfast!

Ingredients
  

  • 1 15 oz can pumpkin
  • 1 1/2 c milk
  • 1/3 c brown sugar
  • 1/4 c maple syrup regular, lite, or sugar free
  • 2 eggs
  • 1 tbsp pumpkin pie spice
  • 1 tsp vanilla
  • 1 tsp baking soda
  • 2 1/2 c old fashioned oats
  • additional maple syrup, chopped pecans, whipped cream optional

Instructions
 

  • Preheat oven to 350°F and grease a 9x9" pan* with cooking spray.
  • In a large bowl, whisk together the pumpkin, milk, brown sugar, maple syrup, eggs, pumpkin pie spice, vanilla and baking soda.
  • Add the oats and stir until combined.
  • Pour into prepared pan and bake for 35 minutes. The center will be a little wiggly, but will set up as it cools.
  • Enjoy warm or cold. Serve with additional maple syrup, chopped pecans and/or whipped topping!

Notes

*You can also use an 8x8 square pan, though it will take an additional 5 minutes in the oven.
