Preheat oven to 400°F.
In a mixing bowl, combine the cubed sweet potatoes, olive oil, salt and onion powder; dump onto one end of the sheet pan.
Cut the sausage links into ½ - 1 inch pieces and place them on the opposite end of the sheet pan.
In a mixing bowl (I recommend using the same one you used for the sweet potatoes!), whisk together the eggs, red pepper, milk, salt and black pepper.
Place a small baking dish (I used a 6-cup rectangular dish, but a loaf pan would work great too) in the center of the sheet pan.
Grease the baking dish and pour the egg mixture into the dish.
Your sheet pan breakfast is ready to bake!
You'll bake for 30-35 minutes, stirring the eggs after the first 15 minutes, then every 5-10 minutes after that until the eggs and sausage are cooked through and the sweet potatoes are soft.
In a bowl, layer sweet potatoes, sausage, then eggs.
Top with cheese, plain Greek yogurt, avocado pieces, hot sauce and/or whatever toppings you desire!
