Strawberry Lemonade Poke Cake


You'll need lemon cake mix, lemon zest, eggs, oil, Strawberry Jello, water,  strawberries, instant lemon pudding, powdered sugar, milk, and whipped topping.  

Combine all ingredients for the cake mix and add a tablespoon of lemon zest. 

Bake as directed. Once out of the oven, poke holes in it and set it aside. 

For the filling: Mix the strawberry gelatin with a cup of boiling water. Once dissolved, add cold water and diced strawberries. 

Pour the filling over the whole cake. Cover the cake and chill it in the fridge for at least 6 hours. 

For the topping: Wisk the pudding, cold milk, and powdered sugar together. Let sit for 5 mins. 

Fold the whipped topping into the pudding mixture. 

Spread over the top of the chilled cake; garnish as desired... and enjoy!
