Buckeye Brownies

These layered Buckeye Brownies are a must for all peanut butter lovers! With a chewy brownie base layer, a thick peanut butter filling and simple chocolate coating on top, these will remind you of a classic no-bake peanut butter ball!

  • One 8x8 or 9x9-inch square pan

Ingredients

  • One Box of brownie mix plus ingredients listed on back of box
  • 1 cup creamy peanut butter
  • 1/4 cup butter melted
  • 1 teaspoon vanilla
  • 1 cup powdered sugar
  • 1 cup chocolate chips
  • 1 teaspoon vegetable oil

Instructions

  • Preheat oven to 350°F and spray an 8x8 or 9x9-inch pan with cooking spray.
  • Mix the brownies according to package instructions and spread into prepared pan; bake.
  • While the brownies are in the oven, mix up the creamy peanut butter layer.
  • Stir together the peanut butter, melted butter and vanilla in a mixing bowl. Add the powdered sugar and stir until combined.
  • Spoon the peanut butter mixture over the warm brownies and spread with a spatula.
  • Add the chocolate chips and vegetable oil to a microwave-safe bowl.
  • Cook on high in 20 second intervals, stirring after each interval until the chocolate is melted and smooth.
  • Spread over the peanut butter layer.
  • Let the brownies cool, then cut and serve.
