Buffalo Chicken Pasta

Ingredients

  • 1 pound chicken breasts
  • 1 tablespoon vegetable oil
  • 1 tablespoon minced garlic
  • 2 cups chicken broth
  • 1 1/2 cups water
  • 1/3 cup buffalo sauce
  • 8 ounces dry penne pasta
  • 4 ounces cream cheese
  • 1/2 cup shredded cheddar cheese
  • sliced green onions, ranch dressing and buffalo sauce for garnish, if desired

Instructions

  • Cut the chicken breasts into one inch cubes*.

  • Add 1 tablespoon vegetable oil into a large skillet over medium heat.

  • Sauté the chicken and minced garlic until the chicken is sautéed on all sides; sprinkle with ground black pepper, if desired.

  • Add the broth, water, buffalo sauce and pasta.
    2 cups chicken broth, 1 1/2 cups water, 1/3 cup buffalo sauce, 8 ounces dry penne pasta
  • Bring the mixture to a boil.
  • Boil for 15 minutes or until the pasta is tender, stirring occasionally.
  • Stir in the cream cheese until smooth.

  • Top with cheddar cheese and cover for 2 minutes or until melted.

  • Garnish with additional buffalo sauce, ranch or blue cheese dressing and green onions, if desired.

Notes

*Cooked and shredded chicken (i.e. rotisserie chicken or leftover grilled chicken) can be used in place of the raw chicken breasts.  Simply add it into the pasta when you add the cream cheese.
