Caramel Apple Cheesecake Bars

Ingredients

Crust Ingredients

  • 1 box white cake mix dry
  • 1/2 cup unsalted butter melted

Cheesecake Ingredients

  • 16 ounces cream cheese softened
  • 1 14-ounce can sweetened condensed milk
  • 2 eggs
  • 1 teaspoon vanilla extract

Apple Mixture

  • 3 cups diced apples peeled, cored and finely diced
  • 1/4 cup brown sugar
  • 1/4 cup caramel sauce
  • 1 tablespoon flour
  • 1 teaspoon cinnamon
  • additional caramel sauce for drizzle on top

Instructions

Make the Crust

  • Preheat the oven to 350℉ and grease a 9x13 inch metal pan.
  • Combine the dry cake mix and melted butter.
    1 box white cake mix, 1/2 cup unsalted butter
  • Press 2/3 of the mixture into the bottom of the prepared pan; set aside.

Make the Cheesecake Filling

  • Place the cream cheese in a large bowl and stir until smooth.
    16 ounces cream cheese
  • Slowly add the sweetened condensed milk with a whisk to make sure it's mixed well.
    1 14-ounce can sweetened condensed milk
  • Add the eggs and vanilla and stir until well-combined.
    2 eggs, 1 teaspoon vanilla extract

Make the Apple Mixture

  • In a large bowl, combine the apples, brown sugar, caramel sauce, flour and cinnamon.
    3 cups diced apples, 1/4 cup brown sugar, 1/4 cup caramel sauce, 1 tablespoon flour, 1 teaspoon cinnamon

Assemble and Bake

  • Pour the cheesecake filling over the crust.
  • Spoon the apple mixture over the cheesecake filling.
  • Top with the remaining crumb mixture.
  • Bake for 35 minutes or until the edges are golden brown.
  • Let cool completely then refrigerate until ready to serve.
  • Top with caramel sauce and serve.

Notes

*A glass pan can also be used, but note that it'll take a bit more time in the oven to cook through.
*If you don't have any sweetened condensed milk, you can simply add 1/2 cup of sugar or brown sugar to the cream cheese before adding the eggs and vanilla.
