This Caramel Apple Cobbler has tender apple slices, ooey gooey caramel sauce and a soft melt-in-your-mouth cakey topping. Served up warm with a scoop of vanilla ice cream is like a little slice of heaven!!
In a saucepan, add the apples, cinnamon, brown sugar, salt and water.
4 cups peeled and thinly sliced apples, 1 teaspoon cinnamon, 1/4 cup brown sugar, 1/4 teaspoon salt, 1/4 cup water
Cook apples over medium heat for about 10 minutes, stirring occasionally, or until apples are tender. Remove from heat and stir in 3/4 cup of the caramel. (Save the remaining caramel for serving.)
1 12-ounce jar caramel sauce
In a mixing bowl, whisk together the flour, sugar, baking powder and milk; set aside.
1 cup flour, 1 cup sugar, 2 teaspoons baking powder, 3/4 cup milk
Pour melted butter into the bottom of a 9x13 baking dish.

Pour the batter over the butter; do not stir.
Spoon the apple mixture over the batter; again, do not stir.
Bake for 30-40 minutes. The batter will rise to the top and the apples will be on the bottom in a delicious sauce. Serve warm with vanilla ice cream and remaining caramel sauce.
Notes
I recommend using jarred caramel sauce (vs. the caramel ice cream topping in the plastic bottles).
