Chewy Granola Bars

These no-bake Chewy Granola Bars are made with simple ingredients you likely already have in the pantry! Package them up for quick on-the-go snacks!

Ingredients

  • 1 cup creamy peanut butter
  • 1/2 cup honey
  • 1 teaspoon vanilla
  • 1/2 teaspoon salt
  • 1 1/2 cups old-fashioned oats
  • 1 cup quick oats* (can do all old-fashioned or all quick)
  • 2/3 cup trail mix (or a any mix of dried fruit, nuts, chocolate), chopped
  • 2 tablespoons chocolate chips

Instructions

  • In a large bowl, stir together the peanut butter, honey, vanilla and salt.
  • Add the oats and chopped trail mix; stir until it's all incorporated.
  • Press granola bar mixture into a parchment-lined 9x9 pan.
  • Lay a piece of parchment on top and use a flat measuring cup to press it down into an even layer.
  • Refrigerate for an hour or more.
  • Remove the parchment paper and cut into 16 bars.
  • Melt the chocolate chips and drizzle on top.

Notes

*Oats - You can used all quick or all old-fashioned oats if you just have one or the other.  I like the texture best when using a combination.
