Chocolate Oatmeal Cookies

Chocolate Oatmeal Cookies are such a simple treat. With a soft, chewy interior and rich chocolate flavor, they're perfect for snacks, dessert or to keep in the freezer for unexpected company!

Ingredients

  • 1 cup salted butter softened
  • 1 1/2 cups sugar
  • 1 cup brown sugar
  • 2 eggs
  • 2 teaspoons vanilla
  • 1 1/2 cups flour
  • 1/2 cup cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3 cups quick oats
  • 1/2 cup chopped pecans optional

Instructions

  • Preheat oven to 350°F and line baking sheets with parchment paper.
  • In a large bowl (a stand mixer will work best) cream together the butter and sugars until fluffy.

  • Add the eggs and vanilla and combine.

  • Add the flour, cocoa, baking soda and salt and stir until combined.

  • Stir in the oatmeal and nuts.
    3 cups quick oats, 1/2 cup chopped pecans
  • Scoop onto prepared baking sheets and bake for 8-10 minutes. Add additional time as needed, but make sure to not overbake!
  • Remove to a cooling rack.
