Easy Scalloped Potatoes and Ham

- 1 10-ounce can cream of chicken soup
- 10 ounces milk (one soup can)
- 6 cups peeled and sliced potatoes* Russet or Yukon Gold
- 1 1/2 cups diced ham
- 2 cups shredded cheddar cheese
Preheat oven to 350℉ and grease a 9x13-inch baking dish.
In a large bowl (or right in the baking dish), whisk together the cream of chicken soup.
Add the sliced potatoes, ham and 1 cup of the shredded cheddar cheese and stir until the potatoes are all coated.
Spread to an even layer in the greased pan.
Cover with foil and bake for 1 hour.
Remove the foil and stir the potatoes. Top with the remaining cheese.
Bake an additional 30 minutes uncovered, or until the potatoes are tender and the edges of the pan are bubbly.
Let set for 5 minutes and serve warm.
I use a mandoline to evenly slice the peeled potatoes to about 1/8-inch thick.
You can add black pepper to the soup mixture if you'd like. You can also use a little salt, but with the ham and cheese (both high-sodium ingredients), I don't find it necessary.
Top with fresh parsley after baking for a pop of color!
