Easy Scalloped Potatoes and Ham

Scalloped Potatoes and Ham is comfort food made simple, with just five ingredients coming together in the most delicious way. Tender potatoes, savory ham, and a creamy, cheesy sauce baked to perfection for a warm, cozy meal the whole family will love!

  • 1 9x13-inch baking dish

Ingredients

  • 1 10-ounce can cream of chicken soup
  • 10 ounces milk (one soup can)
  • 6 cups peeled and sliced potatoes* Russet or Yukon Gold
  • 1 1/2 cups diced ham
  • 2 cups shredded cheddar cheese

Instructions

  • Preheat oven to 350℉ and grease a 9x13-inch baking dish.
  • In a large bowl (or right in the baking dish), whisk together the cream of chicken soup.
  • Add the sliced potatoes, ham and 1 cup of the shredded cheddar cheese and stir until the potatoes are all coated.
  • Spread to an even layer in the greased pan.
  • Cover with foil and bake for 1 hour.
  • Remove the foil and stir the potatoes. Top with the remaining cheese.
  • Bake an additional 30 minutes uncovered, or until the potatoes are tender and the edges of the pan are bubbly.
  • Let set for 5 minutes and serve warm.

Notes

I use a mandoline to evenly slice the peeled potatoes to about 1/8-inch thick.
You can add black pepper to the soup mixture if you'd like.  You can also use a little salt, but with the ham and cheese (both high-sodium ingredients), I don't find it necessary.
Top with fresh parsley after baking for a pop of color!
