Funfetti Truffles

Funfetti Truffles taste like funfetti cake, but in a bite-sized truffle! With just four ingredients, they're super easy to make and different sprinkles can used to fit the occasion!

Ingredients

  • 1 11-ounce box vanilla wafers
  • 6 ounces cream cheese softened
  • 1/4 cup sprinkles (jimmies work best)
  • 12 ounces white almond bark

Instructions

  • Place the vanilla wafers into a large plastic baggie and crush them with a rolling pin until you have sand-like pieces.
  • Place the crushed vanilla wafers into a mixing bowl and stir in the softened cream cheese, then the sprinkles.
  • Roll the mixture into 1" balls and place on waxed paper.
  • Melt the coating chocolate (almond bark) in the microwave on a low power setting, stirring often. (If you overheat the chocolate, it won't be as smooth and shiny one it's on the truffles).
  • Dip each truffle into the almond bark and return it to the waxed paper. Sprinkle with additional jimmies.
  • Once the truffles have a firm chocolate shell, place them in an air-tight container and refrigerate until serving.
