Brown the ground pork in a large skillet; when the pork is almost fully cooked, stir in the minced ginger and cook an additional 1-2 minutes.
1 pound ground pork, 1 teaspoon minced ginger
Remove the seasoning packets from the packages of Ramen; stir two of the seasoning packets into the ground pork (discard the third seasoning packet or save for later); set aside.
Add the water to the empty skillet and bring it to a boil.

Stir in the vegetables and let cook for 5 minutes, or until soft.
3 cups frozen stir-fry vegetables
Break up the noodles a bit and stir them into the vegetables; cover with a lid.
3 packages Ramen noodles (pork flavor)
Let the noodles cook for 2 minutes and remove the lid.
Add the ground pork, hoisin sauce and soy sauce. Stir and cook until heated through.
