M&M Cookie Bars
These M&M Cookie Bars are chewy, buttery and full of chocolate! They're the perfect after school snack, weeknight dessert and treat for any holiday!

- 1 cup salted butter softened
- 1 cup brown sugar
- 3/4 cup sugar
- 2 eggs
- 2 teaspoons vanilla extract
- 3 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 cup semi-sweet chocolate chips
- 1 1/3 cups M&M's divided
Preheat oven to 350°F and line a 9x13" pan with cooking spray.
In the bowl of a stand mixer, add the butter, brown sugar and sugar. Beat for about a minute, or until light and fluffy.
Add the eggs and the vanilla; mix well, scraping down the sides to make sure the ingredients are all incorporated.
Add the flour, baking soda and salt; mix until combined.
Add the semi-sweet chocolate chips and 1 cup of the M&M's.
Spread the cookie dough into the prepared pan and smooth out the top.
Sprinkle the remaining M&M's over the dough and press in lightly.
Bake for 25-30 minutes, or until the edges are a golden brown. (Don't overbake or the center will crunchy, rather than chewy!)
Let cook, then cut into squares and enjoy!!
