15-ounce can
pumpkin
1 1/2

milk

brown sugar
1/4
cup
maple syrup
regular, lite, or sugar free

pumpkin pie spice

vanilla

teaspoon
baking soda

old fashioned oats
additional maple syrup, chopped pecans, whipped cream

Instructions
Preheat oven to 350°F and grease a 9x9" pan* with cooking spray.
In a large bowl, whisk together the pumpkin, milk, brown sugar, maple syrup, eggs, pumpkin pie spice, vanilla and baking soda.
Add the oats and stir until combined.
Pour into prepared pan and bake for 35 minutes. The center will be a little wiggly, but will set up as it cools.
Enjoy warm or cold. Serve with additional maple syrup, chopped pecans and/or whipped topping!
Notes
*You can also use an 8x8 square pan, though it will take an additional 5 minutes in the oven.
