Ingredients

  • 3 cups peeled and cubed sweet potatoes (cut into 1/2" cubes)
  • 1 tablespoon olive oil
  • 1/4 teaspoon salt
  • 1/4 teaspoon onion powder
  • 1 12-ounce package uncooked breakfast sausage links
  • 8 eggs
  • 1/4 cup diced red bell pepper
  • 1/3 cup milk
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • toppings, such as cheese, hot sauce, avocado chunks, etc. if desired

Instructions

  • Preheat oven to 400°F.
  • In a mixing bowl, combine the cubed sweet potatoes, olive oil, salt and onion powder; dump onto one end of the sheet pan.
  • Cut the sausage links into 1/2 - 1 inch pieces and place them on the opposite end of the sheet pan.
  • In a mixing bowl (I recommend using the same one you used for the sweet potatoes!), whisk together the eggs, red pepper, milk, salt and black pepper.
  • Place a small baking dish (I used a 6-cup rectangular dish, but a loaf pan would work great too) in the center of the sheet pan.
  • Grease the baking dish and pour the egg mixture into the dish.
  • Your sheet pan breakfast is ready to bake!
  • You'll bake for 30-35 minutes, stirring the eggs after the first 15 minutes, then every 5-10 minutes after that until the eggs and sausage are cooked through and the sweet potatoes are soft.
  • In a bowl, layer sweet potatoes, sausage, then eggs.
  • Top with cheese, plain Greek yogurt, avocado pieces, hot sauce and/or whatever toppings you desire!
