- 2 tablespoons butter
- 2 tablespoons flour
- 2 cups low sodium chicken broth*
- 2 cups milk
- 1 teaspoon minced onion
- 1/2 teaspoon black pepper
- 8 ounces egg noodles about 4 cups
- 1 cup frozen peas optional
- 12 ounces canned tuna in water drained
- 1 cup crushed potato chips
Melt the butter in a large saucepan.
Add the flour and stir for 1 minute.
Slowly add the chicken broth, whisking continuously.
Stir in the milk and bring the mixture to a boil.
Add the minced onion, black pepper, noodles and peas (if using), stir.
Cook for 8-10 minutes, stirring occasionally, until the noodles are soft and most of the mixture has been soaked up by the noodles.
Stir in the tuna. Season to taste with salt and pepper.
Top with crushed potato chips and serve warm.
