Stove Top Tuna Noodle Casserole

Ingredients

  • 2 tablespoons butter
  • 2 tablespoons flour
  • 2 cups low sodium chicken broth*
  • 2 cups milk
  • 1 teaspoon minced onion
  • 1/2 teaspoon black pepper
  • 8 ounces egg noodles about 4 cups
  • 1 cup frozen peas optional
  • 12 ounces canned tuna in water drained
  • 1 cup crushed potato chips

Instructions

  • Melt the butter in a large saucepan.
  • Add the flour and stir for 1 minute.
  • Slowly add the chicken broth, whisking continuously.
  • Stir in the milk and bring the mixture to a boil.
  • Add the minced onion, black pepper, noodles and peas (if using), stir.
  • Cook for 8-10 minutes, stirring occasionally, until the noodles are soft and most of the mixture has been soaked up by the noodles.
  • Stir in the tuna. Season to taste with salt and pepper.
  • Top with crushed potato chips and serve warm.
