Strawberry Cookies
These soft Strawberry Cookies are moist, tender and topped with a smooth cream cheese frosting. They use real strawberries and are especially perfect for berry season and Valentine's Day!

- 1/2 cup butter softened
- 3/4 cup brown sugar
- 1 egg
- 1 teaspoon vanilla
- 1 1/2 cups flour
- 1/3 cup old-fashioned oats
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup diced fresh strawberries
Frosting
- 3 ounces cream cheese softened
- 1 cup powdered sugar
- 1 teaspoon vanilla
Preheat oven to 350°F and line baking sheets with parchment paper or silicone baking mats.
In the bowl of a stand mixer, combine the butter and brown sugar. Cream until the butter mixture is light and fluffy.
Add the egg and vanilla and mix until combined.
In a separate bowl, combine the flour, oats, soda and salt.
Pour the dry ingredients into the mixer and stir until combined.
Add the strawberries and gently mix them in.
Scoop the dough onto the prepared baking sheets and bake for 10-12 minutes, or until golden brown.
Remove the cookies to a wire rack and let cool completely.
Make the frosting by stirring the cream cheese, powdered sugar and vanilla until smooth.
Spread liberally over each of the cookies.
