These soft Strawberry Cookies are moist, tender and topped with a smooth cream cheese frosting. They use real strawberries and are especially perfect for berry season and Valentine's Day!

Ingredients

  • 1/2 cup butter softened
  • 3/4 cup brown sugar
  • 1 egg
  • 1 teaspoon vanilla
  • 1 1/2 cups flour
  • 1/3 cup old-fashioned oats
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup diced fresh strawberries

Frosting

  • 3 ounces cream cheese softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla

Instructions

  • Preheat oven to 350°F and line baking sheets with parchment paper or silicone baking mats.
  • In the bowl of a stand mixer, combine the butter and brown sugar. Cream until the butter mixture is light and fluffy.
  • Add the egg and vanilla and mix until combined.
  • In a separate bowl, combine the flour, oats, soda and salt.
  • Pour the dry ingredients into the mixer and stir until combined.
  • Add the strawberries and gently mix them in.
  • Scoop the dough onto the prepared baking sheets and bake for 10-12 minutes, or until golden brown.
  • Remove the cookies to a wire rack and let cool completely.
  • Make the frosting by stirring the cream cheese, powdered sugar and vanilla until smooth.
  • Spread liberally over each of the cookies.
