Sugar Cookie Crust
- 3/4 cup butter softened
- 1 cup sugar
- 1 egg
- 2 teaspoons vanilla
- 2 cups flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
Toppings
- 1 8-ounce package cream cheese softened
- 2 tablespoons sour cream
- 1 1/2 cups powdered sugar
- 1 teaspoon vanilla
- 1 cup whipped topping
- 3-4 cups fruit
Make the Sugar Cookie Crust
Preheat oven to 350F and line a baking sheet with parchment paper.
In a large bowl, combine the butter and sugar.
Stir in the egg and vanilla.
Lastly, add the dry ingredients and mix until a dough is formed.
Press the dough onto the prepared baking sheet into an 8x13 inch rectangle (more size options in notes below).
Bake for 12-15 minutes or until outer edges are golden brown; don't over-bake. Let cool completely.
Make the Cream Cheese Topping
Add the softened cream cheese to a large bowl and stir until smooth.
Stir in the sour cream, powdered sugar and vanilla extract.
Once smooth, fold in the whipped topping.
Assemble the Fruit Pizza
Spread the topping over the cooled cookie crust.
Add fruit in whatever pattern desired.
Refrigerate until ready to serve.
