Teriyaki Pork Stir Fry

Lean pork loin is the star in this stir fry! Tender meat, nutrient-rich broccoli and flavorful sauce is combined for a filling, super quick meal!

Ingredients

  • 1 tablespoon vegetable oil (or sesame oil)
  • 1 1/2 pounds pork loin or pork tenderloin cut into 1" cubes
  • 1 medium bunch broccoli cut into florets
  • 1/2 cup + 1 tablespoon water divided
  • 1/4 cup soy sauce
  • 3 tablespoons brown sugar
  • 1 tablespoon corn starch
  • 1/8 teaspoon ginger powder
  • 1/2 teaspoon granulated garlic
  • prepared rice for serving
  • sesame seeds for garnish

Instructions

  • In a large skillet over medium heat, add vegetable oil. Once the skillet is hot, add the cubed pork.
  • Season pork with salt and pepper. Cook for a few minutes, stirring occasionally, until pork reaches 145°F. Remove to a plate, cover with foil and set aside.
  • To the same skillet over medium heat, add the broccoli florets and 1 tbsp water. Let cook for 4 minutes, or slightly softened. Remove to a bowl, cover with foil and set aside.
  • In a bowl, whisk together the 1/2 c water, soy sauce, brown sugar, corn starch, ginger and garlic.
  • Return skillet to burner on medium heat. Pour the sauce into the pan, stirring occasionally until bubbly and thickened.
  • Stir in the pork and broccoli.
  • Serve warm over rice and garnish with sesame seeds.
