Ingredients

  • 2 eggs
  • 1/2 cup flour
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 3/4 cup salted butter softened (but not melted!)
  • 1 teaspoon vanilla
  • 1 cup semi-sweet chocolate chips
  • 1 cup chopped pecans or walnuts optional
  • One 9-inch pie crust*

Instructions

  • Preheat oven to 325°F.
  • In a large bowl (or the bowl of a stand mixer), whisk the eggs until foamy.
  • Add the flour, sugar and brown sugar and mix well.
  • Mix in the softened butter and vanilla and then the chocolate chips and nuts (if using).
  • Pour the batter into your prepared pie crust and smooth the top.
  • Bake for 50 minutes, or until a toothpick halfway between the center and the pie crust comes out clean.

Notes

*My flaky homemade pie crust is excellent if you've got a little extra time!
Let the pie cool for at least 30 minutes before slicing to let it set up a bit.
