Toll House Pie Bars

These bars have a pie crust base and a creamy, chewy, chocolate chip cookie filling. Top with whipped topping or ice cream for the ultimate dessert!

Ingredients

  • 1 refrigerated pie crust
  • 2 eggs
  • ½ cup flour
  • ½ cup sugar
  • ½ cup brown sugar
  • ¾ cup salted butter softened
  • 1 teaspoon vanilla
  • 1 cup chocolate chips
  • 1 cup chopped nuts optional

Instructions

  • Preheat oven to 325°F.
  • Unroll the packaged pie crust and press into an 8x8 or 9x9 pan.* You'll want to cover the bottom of the pan and about 1" up the sides. Set aside.
  • In a large bowl, whisk the eggs until foamy.
  • Add the flour, sugar and brown sugar and mix well.
  • Mix in the softened butter and vanilla, then the chocolate chips and nuts.
  • Pour the batter into the crust and use a spatula to create a smooth top.
  • Bake for 45-50 minutes or until almost set. A toothpick halfway between the center and the edge should come out clean.
  • Let cool, cut into bars and serve warm with whipped topping and/or ice cream, if desired.

Notes

This recipe can easily be made in a 9x13 pan for a larger crowd.  See below for the ingredient amounts:
  • 2 pie crusts (might not need quite all of it)
  • 3 eggs
  • 3/4 c flour
  • 3/4 c sugar
  • 3/4 c brown sugar
  • 1 c + 2 tbsp butter
  • 2 tsp vanilla
  • 1 1/2 c chocolate chips
  • 1 1/2 c chopped nuts, optional
