These Twix Cookie Cups are soft and chewy with a gooey caramel center and a rich milk chocolate topping - basically everything you love about a Twix bar in cookie-cup form! And made with just 5 ingredients, it's easy to whip up for any occasion!
Preheat oven to 350F and grease 48 mini muffin cups with cooking spray.
Cut each of the 24 cookies in half and roll each into a ball.
1 16-ounce package sugar cookie dough
Place one in each muffin tin cup and flatten with your fingers (no need to form a "cup"….just flatten).
Bake for about 10 minutes, or until golden brown around the edges.
Use the cap of a bottle (I use the cap of my vanilla extract bottle) to press into each cookie to form a "cup."
Let cool for 5 minutes in the pan and then remove to a wire cooling rack.
Make the Caramel Filling
Add the caramel bits and heavy whipping cream to a microwave-safe bowl.
1 11-ounce package caramel bits, 1/3 cup heavy whipping cream
Microwave (or cook on the stovetop) until the butter and caramels are melted; whisk until smooth.
Spoon about 2 teaspoons of caramel sauce into each of the cookie cups; refrigerate.
Top with Chocolate
Add the chocolate chips to a microwave-safe bowl.
1 cup milk chocolate chips
Microwave for 30 seconds and stir. Continue to microwave in 20 second bursts, stirring after each, until smooth. Be sure not to overheat or it'll scorch the chocolate and make it gritty instead of smooth!
To add the chocolate, you can either dip the cookie in the chocolate or spoon it on top.
Sprinkle with flaky sea salt.

You can opt to use semi-sweet or dark chocolate chips in place of the milk chocolate chips if desired!
