Ingredients

  • 3 bagels, sliced (6 halves)
  • 3 eggs
  • 1/4 cup cottage cheese
  • 1/8 teaspoon seasoned salt
  • 2 tablespoons diced red pepper optional
  • 2/3 cup prepared country-style gravy* OR 3 ounces cream cheese
  • 1/2 pound breakfast sausage, cooked and crumbled or 6 slices of cooked bacon, chopped
  • 4 ounces shredded cheddar cheese about 1 cup

Instructions

  • Preheat oven to 350℉ and line a sheet pan with parchment paper for easy cleanup.
  • Slice the bagels and place them on the pan cut-side up.
  • In a mixing bowl, whisk together the eggs, cottage cheese, seasoned salt and red peppers (if using).
  • Pour the egg mixture into a hot skillet, scrambling until cooked;* set aside.
  • Top each bagel with about 2 tablespoons of the gravy and spread to an even layer.
  • Next, divide the eggs evenly among the bagels followed by the meat and cheese.
  • Bake for 8-10 minutes or until the cheese is all melted and the center is warm.

Notes

*The eggs can also be cooked in the microwave to cut down on time and dishes.  Cook on HIGH for 30 second increments, mixing after each until cooked.

Breakfast Pizza Bagel Variations:

  • Sauce
    • Country-Style Gravy - You can make your own, prepare a packet of gravy mix, or buy a jarred white gravy.
    • Cream Cheese - I love using plain or onion & chive cream cheese on these.  If using cream cheese, you'll use about 1/2 an ounce on each bagel half.
  • Meat
    • Bacon - Cooked and crumbled/chopped.
    • Ground Breakfast Sausage - Cooked, drained, and crumbled.
    • Skip the Meat!  Skip the meat and add extra veggies instead!
