With creamy gravy, fluffy scrambled eggs, savory sausage and melty cheese, it’s a hearty meal your whole family will love. And even better? The possibilities are endless – mix, match, and make them your own!

Ingredients Needed
- Bagels – I typically buy the large plain bagels that come in a 6-pack (17 – 18 ounce package). They’re a great sturdy base for all the toppings!
- Eggs – I always use “large” eggs.
- Cottage Cheese – The addition of cottage cheese makes the scrambled eggs extra soft & fluffy!
- Seasoned Salt – Such as Lawry’s.
- Red Bell Pepper – I love adding some color to the bagels with red bell pepper, but feel free to skip it.
- Breakfast Sausage – Buy the ground breakfast sausage (typically comes on a tray or in a tube), then cook and crumble it before adding to the pizzas.
- Cheddar Cheese – I like to shred my own block of cheese for optimal melty-ness, but you can also use pre-shredded cheese in a pinch!
How to Make Breakfast Pizza Bagels
Prep the Bagels
Slice the bagels in half and place them cut-side up on a baking sheet. Optional Step: Toast the bagels by baking them for 3-4 minutes in a 350F oven.


Make the Scrambled Eggs
Whisk the eggs with the cottage cheese, seasoned salt, and optional red bell pepper. You can cook the eggs in a skillet OR microwave on high in 30 second increments, stirring between each interval, until cooked through but still soft. The eggs can finish cooking in the oven, so you don’t want to overdo it.


Layer the Bagels
Now it’s time to build up the flavor!! First, you’ll add the “sauce.” You can use country-style gravy or cream cheese.
Then, add the scrambled eggs, cooked sausage, and the shredded cheese.


Bake & Serve
Bake the pizza bagels in the oven until the cheese is melted and the toppings are all nice and toasty. Serve warm and garnish with fresh parsley, sliced green onions, and/or hot sauce, if desired!


Breakfast Pizza Bagel Variations
The options are truly endless when it comes to these cute little breakfast pizzas! Use one of these ideas or create your own!
- Add a Flavored Bagel! Use a sesame bagel, onion bagel, or whole wheat bagel in place of the plain version.
- Change up the Sauce! If you don’t love country-style gravy (the white gravy with black pepper throughout), use cream cheese instead! Plain cream cheese is good, but onion and chive is my favorite!!
- Mix up the Meat! Skip the sausage and add crumbled bacon or diced ham! Or make it extra meaty and use all three!
- Add Veggies! Add your favorite type of peppers, diced onions, spinach, etc. for added color and nutrition on these bagels.
- Make ’em Mini! Instead of the 3 large (six half) bagels, use 6 mini bagels to make 12 minis!

Make Ahead of Time & Freeze!
These Breakfast Pizza Bagels make for the perfect breakfast meal prep option. Make the bagels (bake them or not, either way is fine) then wrap them up in plastic wrap and store in a freezer bag.
When you’re ready to enjoy them, grab a bagel (or however many you need) and heat them up!
- In the Oven – This is a great way to heat them up (and perfect if you’re wanting to heat up several). Place them in a 350F oven for 8-10 minutes or until warmed through.
- In the Air Fryer – This is my favorite method if you’re wanting them nice and crisp! 6-10 minutes (watch closely!) in a 350F air fryer and you’re set.
- In the Microwave – This is an option, but not my top pick, because if you overheat them, the bagel will be super tough and chewy. Heat them on a low setting (instead of high heat) in 20-30 second increments just until warmed through.
