Shortbread Crust
- 1 1/2 cups flour
- 3/4 cup brown sugar
- 1/2 cup + 1 tablespoon butter room temperature
- 1/4 teaspoon salt
Topping
- 1 cup butterscotch chips
- 1/4 cup corn syrup
- 2 tablespoons butter
- 1 tablespoon water
- 1/4 teaspoon salt
- 2 cups chopped pecans
Preheat the oven to 350°F.
Combine the crust ingredients until the butter is fully incorporated.
Press into a lightly greased 9x13 pan and bake for 10 minutes.
While the crust is baking, in a microwave-safe bowl, combine the butterscotch chips, corn syrup, butter, water and salt.
Microwave in 30 second intervals until the chips are melted.
Stir in the chopped pecans then spoon the mixture over the shortbread crust and carefully spread it out.
Bake an additional 8 minutes then let the bars cool and enjoy!
This recipe can also be made with chopped almonds, walnuts, peanuts, or cashews
I like making these bars look a little "fancier" by cutting them into squares, then cutting them into cute little triangles
Once you've gotten the first bar out of the pan, the rest will come out easily; If you've got parchment paper on hand, you can line the pan prior to baking with parchment for easier removal
