Ingredients

Graham Cracker Crust

  • 8 sheets graham crackers*
  • 1/4 cup butter melted
  • 2 tablespoons sugar

Cheesecake Filling

  • 12 ounces cream cheese (1 1/2 8-ounce bricks), softened
  • 1/2 cup powdered sugar
  • 1/3 cup sour cream
  • 1 teaspoon vanilla extract
  • 1 8-ounce tub whipped topping
  • fresh fruit or fruit filling

Instructions

Graham Cracker Crust

  • Add the graham crackers, melted butter and sugar to the bowl of a food processor.
    8 sheets graham crackers*, 1/4 cup butter, 2 tablespoons sugar
  • Process until the graham crackers and in fine crumbs (should resemble a wet sand), scraping down the sides of the bowl, if needed.
  • Divide the mixture between six cups and press down with a spoon; set aside.

Cheesecake Filling

  • Add the softened cream cheese and powdered sugar to the bowl of a stand mixer fitted with the paddle attachment. Blend until smooth.
    12 ounces cream cheese, 1/2 cup powdered sugar
  • Add the sour cream and vanilla and mix until smooth.
    1/3 cup sour cream, 1 teaspoon vanilla extract
  • Add the whipped topping and mix until well-combined, scraping down the sides of the bowl at least once.
    1 8-ounce tub whipped topping
  • Spoon the mixture into the cups on top of the graham crackers and use the back of a spoon to smooth out the tops.
  • Cover with plastic wrap and refrigerate for at least 2 hours.
  • Top as desired and enjoy!

*Or 1 cup of graham cracker crumbs.
