Cookie Dough Truffles

What's better than cookie dough?? Cookie dough dunked in chocolate! Yes, please!

Ingredients

  • 1 cup butter softened
  • 1 cup brown sugar
  • 2/3 cup sugar
  • 1 tablespoon vanilla
  • 1/4 cup corn syrup
  • 2 1/4 cups flour (heat-treated) see notes below
  • 1/2 teaspoon salt
  • 1 cup mini chocolate chips
  • 1/4 cup chopped pecans or walnuts optional
  • Coating Chocolate

Instructions

  • In a mixing bowl (stand mixer works best), mix the butter, brown sugar and white sugar until light and fluffy.
  • Add the vanilla and corn syrup and stir until smooth.
  • Next, add the flour and salt and mix until combined.
  • Stir in the chocolate chips and nuts.
  • Roll the dough into 1" balls and set on a waxed paper-lined baking sheet.
  • Melt the coating chocolate (almond bark) in the microwave on a low power setting, stirring often. (If you overheat the chocolate, it won't be as smooth and shiny once it's on the truffles).
  • Dip each truffle into the chocolate and return it to the waxed paper to harden. (Add sprinkles here if you'd like!)
  • Once the truffles have a firm chocolate shell, place them in an air-tight container and refrigerate until serving.

Notes

How to Heat Treat Flour

  1. Spoon the flour onto a microwave-safe bowl or plate.
  2. Microwave on high for about 1 to 1 1/2 minutes, stirring every 30 seconds.
  3. The flour will be warm (needs to be 160F+) and therefore any bacteria present will be no more!
  4. Let cool (place on a cold plate to speed the process up) before adding to the recipe.
