Cornbread Pudding

Cornbread Pudding is a creamy side dish with sweet corn mixed into a cornbread-like batter. It's super easy to throw together and is a must at any holiday gathering!

Ingredients

  • 2 eggs
  • 1 cup sour cream
  • 1/2 cup butter melted
  • 1 15.25-ounce can whole kernel corn drained
  • 1 14.75-ounce can creamed corn
  • 1 8.5-ounce box cornbread mix

Instructions

  • Grease a 3-qt casserole dish with cooking spray and preheat oven to 350°F.
  • In a large bowl, combine the eggs, sour cream, melted butter and both cans of corn.

  • Stir in the cornbread mix, then pour mixture into the prepared casserole dish.

  • Bake for 40-45 minutes; serve warm.

Notes

You can also make this in a slow cooker.  I recommend cooking on high for 2 hours or on low for 3 hours.  Please note that every slow cooker is different, so I highly recommend testing yours before making for an event!
