Easy Taco Pasta Skillet

This skillet dinner is beefy, cheesy, and full of Tex Mex flavors - even better yet, only takes 20 minutes from start to finish and is all made in the single skillet!

Ingredients

  • 1 pound ground beef
  • 2 cups chicken broth
  • 1 cup taco sauce
  • 1 10-ounce can RoTel tomatoes with green chilies drained
  • 1 teaspoon cumin
  • 1 teaspoon dried oregano
  • 8 ounces angel hair pasta broken into pieces, uncooked
  • 1/2 cup fresh cilantro chopped
  • 1 cup Mexican blend shredded cheese divided

Instructions

  • In a large skillet, brown the ground beef until fully cooked; drain.

  • Add the broth, taco sauce, tomatoes, cumin and oregano and turn the burner on high heat, bringing the mixture to a boil.
    2 cups chicken broth, 1 cup taco sauce, 1 10-ounce can RoTel tomatoes with green chilies, 1 teaspoon cumin, 1 teaspoon dried oregano
  • Stir in the pasta and bring to a boil again.  Reduce the heat to medium and cook for 4 minutes, stirring occasionally.
    8 ounces angel hair pasta
  • Stir in the cilantro and 1/2 cup of the cheese.  
    1/2 cup fresh cilantro, 1 cup Mexican blend shredded cheese
  • Remove from the heat and sprinkle the remaining cheese on top.

Notes

Serve the pasta with taco toppings if desired - i.e. sour cream, hot sauce, diced avocado, etc.!
