Frosted Apple Cookies

These Apple Cookies are the perfect afternoon snack or dessert on-the-go. They’re soft, sweet, full of apples and topped with a smooth cinnamon cream cheese frosting!

Ingredients

  • 1 cup butter softened
  • 1 1/2 cups brown sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 3 cups flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 tablespoon apple pie spice (or cinnamon)
  • 2 cups finely diced or shredded apples (peeled & cored)
  • 3/4 cup oats (old fashioned or quick)

Frosting

  • 3 ounces cream cheese softened
  • 1 tablespoon butter softened
  • 1 1/2 cups powdered sugar
  • 1 tablespoon vanilla extract
  • 1/2 teaspoon cinnamon

Instructions

  • Cream together the butter and brown sugar until light and fluffy.

  • Stir in the eggs and vanilla until well-combined.

  • Add the flour, soda, salt and apple pie spice (or cinnamon); mix well.
    3 cups flour, 1 teaspoon baking soda, 1/4 teaspoon salt, 1 tablespoon apple pie spice (or cinnamon)
  • Stir in the apples and oats.
    2 cups finely diced or shredded apples (peeled & cored), 3/4 cup oats (old fashioned or quick)
  • Drop by rounded tablespoons on a baking sheet lined with parchment paper.
  • Bake at 350°F for 10-12 minutes or until light golden brown; cool completely.

For the Frosting

  • Beat the cream cheese and butter until smooth. Stir in the powdered sugar, vanilla and cinnamon and beat until light and fluffy.
    3 ounces cream cheese, 1 tablespoon butter, 1 1/2 cups powdered sugar, 1 tablespoon vanilla extract, 1/2 teaspoon cinnamon
  • Spread frosting over the cooled cookies.

Notes

Due to the cream cheese in the frosting, you'll want to store the cookies in the fridge for up to 5 days or freeze for up to 2 months.
