One Pot Mexican Beef & Rice
A jar of salsa and a packet of taco seasoning kick-start this easy One Pot Mexican Beef and Rice making it a delicious dinner option with very little clean-up!

- 1 pound ground beef
- 2 cups low sodium beef broth
- One 16 ounce jar chunky salsa
- One 15.25 ounce can corn drained
- One 1 ounce packet taco seasoning
- 1 tablespoon minced onion
- 1 1/2 cups instant rice
- 1 cup shredded cheddar cheese
- toppings, such as tomatoes, avocado, green onion, jalapeños, etc. optional
In a large skillet, brown the ground beef until fully cooked; drain.
Add the beef broth, salsa, drained corn, taco seasoning and minced onion; bring to a boil.
Add the rice and stir.
Turn the heat to low, cover the skillet with the lid. Let the mixture cook for 7-9 minutes, stirring every couple minutes.
Remove from the heat, add the cheese and cover with the lid until cheese is melted.
Add toppings of choice and enjoy!
