- 2 pounds baby carrots*
- 3 tablespoons olive oil
- 1 1-ounce packet ranch seasoning
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- fresh parsley for garnish optional
Preheat oven to 400°F.
Pat the carrots down with a paper towel if there's excess moisture in the bag.
2 pounds baby carrots*
Add the carrots to a 9x13 baking dish.
Drizzle the oil over the carrots and sprinkle with ranch seasoning mix, salt, and pepper.
3 tablespoons olive oil, 1 1-ounce packet ranch seasoning, 1/2 teaspoon salt, 1/2 teaspoon black pepper
Mix until the carrots are coated in the oil and ranch.
Roast in the oven for 40-50 minutes or until golden brown** and tender.
Transfer to a serving dish and sprinkle with parsley, if desired.

*Or about 2 1/2 cups peeled and halved carrot sticks
**Broil for the last minute or two for extra color!
