  • 1 9x13-inch baking dish

Ingredients

  • 2 pounds baby carrots*
  • 3 tablespoons olive oil
  • 1 1-ounce packet ranch seasoning
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • fresh parsley for garnish optional

Instructions

  • Preheat oven to 400°F.
  • Pat the carrots down with a paper towel if there's excess moisture in the bag.
    2 pounds baby carrots*
  • Add the carrots to a 9x13 baking dish.
  • Drizzle the oil over the carrots and sprinkle with ranch seasoning mix, salt, and pepper.
    3 tablespoons olive oil, 1 1-ounce packet ranch seasoning, 1/2 teaspoon salt, 1/2 teaspoon black pepper
  • Mix until the carrots are coated in the oil and ranch.
  • Roast in the oven for 40-50 minutes or until golden brown** and tender.
  • Transfer to a serving dish and sprinkle with parsley, if desired.

Notes

*Or about 2 1/2 cups peeled and halved carrot sticks
**Broil for the last minute or two for extra color!
