Ingredients

For the Pork

  • 1 pork tenderloin 1 - 1.25 pounds
  • 1/2 cup cornstarch
  • 1/4 cup flour
  • 1/2 teaspoon seasoned salt
  • oil for frying

For the Sauce

  • 1/2 cup sweet chili sauce
  • 1 tablespoon lime juice
  • 1 tablespoon fish sauce
  • 1 tablespoon rice wine vinegar
  • 1 teaspoon minced garlic
  • 1/2 teaspoon ginger paste
  • cooked rice and green onions for serving optional

Instructions

Coat and Fry the Pork

  • Cut the pork tenderloin into even bite-sized cubes, about 1 inch each; pat dry.

  • In a mixing bowl, combine the cornstarch, flour, and seasoned salt. Add the pork tenderloin and toss to coat.

  • Add oil to a skillet until 1/2 inch deep and heat to about 350℉.

  • Once hot, add half of the pork. Cook for 1-2 minutes then flip and cook until the internal temperature of the largest pieces reaches 145℉.
  • Use a slotted spoon to remove the pork to a clean plate.
  • Repeat with the second half of the pork.

Make the Sauce and Coat the Pork

  • In a saucepan, combine the sweet chili sauce, lime juice, fish sauce, rice wine vinegar, minced garlic, and ginger paste.

  • Stir the mixture together and bring to a simmer. Let it cook on medium-low heat for 2 minutes; the mixture will thicken slightly.
  • Add the cooked pork and toss to coat.
  • Serve the pork with rice and green onions, if desired.
