Cookies
- 1 cup salted butter
- 1 1/2 cups sugar
- 4 eggs
- 2 cups flour
- 1/2 cup cocoa powder
- 1 pinch salt
Fudgy Buttercream
- 1/2 cup salted butter
- 2 cups powdered sugar
- 1/4 cup cocoa powder
- 1 teaspoons vanilla
- 1 tablespoon milk
- Sprinkles, mini chocolate chips, other toppings optional
For the Cookies
Cream the butter and sugar together in the bowl of a stand mixer.
Beat in the eggs.
In a bowl, combine the flour and cocoa powder; add to the butter/sugar/egg mixture.
Mix until well-combined.
Heat a non-stick waffle iron.
Scoop the dough onto the waffle iron and close.
Let bake for 1 minute and check the cookies. If the edges are still soft and gooey, let it cook a bit longer.
Once cooked, remove to a wire rack to cool.
Make the Frosting & Add Toppings
Add butter to the bowl of a stand mixer; mix until smooth.
Add remaining ingredients and stir slowly until combined.
Use a rubber spatula to scrape down the sides of the bowl.
Increase the speed and beat the frosting until light and fluffy, adding an additional 1-2 tsp milk, if needed.
Spread the frosting over the cooled cookies and top with mini chocolate chips or sprinkles, if desired.
