Ingredients

Cookies

  • 1 cup salted butter
  • 1 1/2 cups sugar
  • 4 eggs
  • 2 cups flour
  • 1/2 cup cocoa powder
  • 1 pinch salt

Fudgy Buttercream

  • 1/2 cup salted butter
  • 2 cups powdered sugar
  • 1/4 cup cocoa powder
  • 1 teaspoons vanilla
  • 1 tablespoon milk
  • Sprinkles, mini chocolate chips, other toppings optional

Instructions

For the Cookies

  • Cream the butter and sugar together in the bowl of a stand mixer.
  • Beat in the eggs.
  • In a bowl, combine the flour and cocoa powder; add to the butter/sugar/egg mixture.
  • Mix until well-combined.
  • Heat a non-stick waffle iron.
  • Scoop the dough onto the waffle iron and close.
  • Let bake for 1 minute and check the cookies. If the edges are still soft and gooey, let it cook a bit longer.
  • Once cooked, remove to a wire rack to cool.

Make the Frosting & Add Toppings

  • Add butter to the bowl of a stand mixer; mix until smooth.
  • Add remaining ingredients and stir slowly until combined.
  • Use a rubber spatula to scrape down the sides of the bowl.
  • Increase the speed and beat the frosting until light and fluffy, adding an additional 1-2 tsp milk, if needed.
  • Spread the frosting over the cooled cookies and top with mini chocolate chips or sprinkles, if desired.
