- 2 cups cottage cheese
- 1/3 cup sugar or sugar substitute equivalent
- 1 teaspoon vanilla extract
- 4 graham cracker sheets crushed
- 2 cups fresh berries
Add the cottage cheese, sugar (or sugar substitute) and vanilla to a food processor and blend until smooth.
Scoop one heaping tablespoon of crushed graham crackers into each of six small glasses.
Divide the whipped cottage cheese mixture between the glasses.
Top with fresh berries.
Refrigerate 4+ hours before serving to set up.
