Ingredients

  • 2 cups cottage cheese
  • 1/3 cup sugar or sugar substitute equivalent
  • 1 teaspoon vanilla extract
  • 4 graham cracker sheets crushed
  • 2 cups fresh berries

Instructions

  • Add the cottage cheese, sugar (or sugar substitute) and vanilla to a food processor and blend until smooth.
  • Scoop one heaping tablespoon of crushed graham crackers into each of six small glasses.
  • Divide the whipped cottage cheese mixture between the glasses.
  • Top with fresh berries.
  • Refrigerate 4+ hours before serving to set up.
  • Serve cold with a dollop of whipped topping, if desired.
