    Monster Cookie Pie is dense, chewy and full of peanut butter, oats and chocolate. Top with ice cream or a dollop of whipped topping for the ultimate treat!!

    Ya know those days when you've got a strong craving for something super rich?? Well, if you've got a sweet tooth like mine, chances are this happens often! And today's new recipe will satisfy that craving in an instant!

    Monster Cookie Pie. Let's chat about this for a sec....we're talking about a cookie inside of a pie. Yeah, kind of like the Toll House Pie (remember my Toll House Pie Bars??). But this time, we're saying nahh to the classic chocolate chip version and going MONSTER COOKIE style!

    This cookie pie is just as easy as a Toll House Pie - made all in one bowl and goes into a refrigerated pie crust. The oatmeal and peanut butter make it chewy, the chocolate chips add flavor and the M&M's bring a little color and fun to this pie! If you like monster cookies, you're sure to love this!!

    What ingredients do you need to make Monster Cookie Pie?

    • Pie Crust - The easiest option would be to use a refrigerated pie crust that you roll into a pan. However, you could also use a homemade pie crust recipe or a frozen pie crust (just make sure it isn't deep dish as there's not enough filling for that)
    • Eggs - I always use large eggs
    • Sugar
    • Brown Sugar - Be sure to pack it into the measuring cup before adding
    • Butter - You'll want it to be softened (room temp or a little cooler) so it's easy to stir in
    • Peanut Butter - Creamy works best for this recipe
    • Flour
    • Quick Oats - Uncooked
    • Chocolate Chips - I like using semi-sweet, but you could also add milk chocolate chips (I just find them to be too sweet for my taste!)
    • Mini M&M's - You can find these in most grocery stores' baking aisles next to the chocolate chips (the M&M bag calls them "baking bits")
    • Toppings/Garnishes - I like to eat this with a dollop of whipped cream or scoop of ice cream, a drizzle of chocolate and a few extra M&M's!

    How do you make a cookie pie?

    Pie tends to be an overwhelming dessert - why?? Well typically it means rolling out a pie crust, peeling and dicing fruit, crafting a perfect crumb topping, etc. But this Monster Cookie Pie isn't like that at all!

    First, you'll press a refrigerated pie crust into a pan and preheat the oven. Then, you'll mix the ingredients in a stand mixer (see recipe below for details). You'll then pour the batter into the prepared crust, sprinkle with extra M&M's and bake!

    When it comes out of the oven, it'll be a bit soft, so I recommend letting it cool for at least 45-60 minutes before eating. That'll give it enough time to firm up enough to slice into beautiful pieces! Serve, top and devour!!

    How should you store leftover Monster Cookie Pie?

    Cover the leftover pie with plastic wrap. You can leave it on the counter at room temperature for 3-5 days or in the fridge for up to a week. This pie also freezes well. Simply cut into slices, place in freezer bags, remove as much air as possible and freeze!

    I love, love, LOVE this pie. And as much as I love my Blueberry Custard Pie and a delicious Ice Cream Pie, when I want something rich & chocolatey, this Monster Cookie Pie is exactly what I need!

    Servings 12 thin slices

    Ingredients
      

    • 1 refrigerated pie crust*
    • 2 eggs
    • ½ c sugar
    • ½ c packed brown sugar
    • 6 tablespoon butter softened
    • 1 c peanut butter
    • ¼ c flour
    • ½ c quick oats (not cooked)
    • 1 c semi-sweet chocolate chips
    • ½ c mini M&M's (baking bits)
    • additional M&M's and whipped cream if desired

    Instructions
     

    • Preheat oven to 350°F.
    • Unroll pie crust into pan.
    • In the bowl of a stand mixer, whisk the eggs until frothy.
    • Add the sugar and brown sugar and whisk until smooth.
    • Stir in the butter and peanut butter.
    • Stir in the flour, oats, chocolate chips and M&M's then pour into pie crust.
    • Sprinkle with additional M&M's and bake for 50-55 min.
    • Let cool then slice and serve with whipped cream.
