This epic Cookie Dough Ice Cream Dessert has a crunchy cookie crust, vanilla ice cream, loads of cookie dough and a touch of chocolate syrup! It’s the ultimate dessert for cookie dough lovers!!!

Surely we’ve all got at least one person in our lives that LOVES cookie dough. I can think of a few, including myself, but my sister is quite possibly Obsessed. Addicted. Hooked. Whatever you wanna call it….that’s my sister Tara when it comes to cookie dough.

When the idea of this recipe popped into my head and I told her about it, you should’ve seen the look on her face. It was the look of “OMG YUM” and “Don’t you wait another second to get that one posted to the blog!” Well, it’s been a few days (sorry, T!) and lots of recipe testing, but I have a feeling you’ll agree it’s worth the wait!

Ingredients Needed

  • Crunchy chocolate chip cookies – I use the original Chips Ahoy as they’ve got a really nice crunch
  • Butter – Be sure to note that you’ll use butter in two parts of the recipe (some in the crust and some in the cookie dough)
  • Cookie dough – I’ve got a recipe to make your own (butter, brown sugar, sugar, vanilla, flour, mini chocolate chips) OR you can buy pre-made edible cookie dough
  • Ice Cream – I like to use vanilla, but you could certainly use chocolate or even cookie dough (is there really such thing as too much cookie dough?!)
  • Chocolate Syrup – Such as Hershey’s chocolate syrup
  • Whipped Topping

Is Cookie Dough Safe to Eat?

If you purchase pre-made edible cookie dough at the store, just be sure that it states that it’s okay to consume before baking. Pillsbury cookie dough has a note on the very front of the package saying “Safe to Eat Raw.”

You can also easily make your own edible cookie dough safe. When most people think of eating raw cookie dough, their first concern is the raw eggs in the dough. This recipe doesn’t have any eggs, but it does have flour. Like eggs, flour is also most safe to consume when cooked. If you heat-treat the flour, this cookie dough is perfectly safe to eat!

How to Heat Treat Flour for Raw Cookie Dough

Place the flour (you just need 1/2 cup for this recipe) in a microwave-safe bowl. Microwave on high for 20 seconds then stir. Take the temperature of the flour. Continue with the 20 second intervals in the microwave until the flour reaches 165F. Let the flour cool, then you’re good to go!

How to Make Cookie Dough Ice Cream Dessert

Start by Making the Crust

Using a food processor makes this super easy! You’ll place the cookies in the food processor and process them until they’re in fine crumbs. If you don’t have a food processor, you can place them in a large resealable baggie and crush them with a rolling pin.

Then you’ll mix in melted butter and press it into the pan. You can use an 8-inch or 9-inch square pan or an 8×11″ pan.

Next up, make the cookie dough!

….well, that is, if you’re making it. You can skip this step by using pre-made cookie dough! If you make your own, you’ll mix the butter and sugars together. Then add vanilla and stir until smooth. Lastly, you’ll stir in the flour and chocolate chips.

Roll the cookie dough into little balls (about 1/2-inch in diameter) and set them aside.

Time for the Ice Cream!

Let the vanilla ice cream soften so it’s easy to stir. Then you’ll add in half of the whipped topping and stir until smooth.

Then stir in the star of the show – those lovely cookie dough balls!! However, be sure to save a few for the garnish on top! Once you’ve got the ice cream ready, you’ll spread it over the crust, add a drizzle of chocolate syrup and freeze it.

Topping the Dessert

Next, you’ll spread the remaining whipped cream over the chocolate layer. And then, it’s time to garnish!

I like to garnish with the remaining cookies (crushed) and the cookie dough balls. Then when I serve it, I’ll give it another drizzle of chocolate syrup….because why not?! 🙂

  • Try using different flavors of ice cream! Chocolate, chocolate chip, cookies & cream, cookie dough…. mmmmm!
  • Use different flavors of cookies & cookie dough! How about crunchy peanut butter cookies (Nutter Butter cookies), pre-made peanut butter cookie dough and a drizzle of melted peanut butter on top?!

Equipment

  • One 8×8" or 9×9" square pan

Ingredients
 

Cookie Crust

  • One 13-ounce package crunchy chocolate chip cookies such as Chips Ahoy, divided
  • 1/4 cup butter melted

Cookie Dough (You can simply use 1 – 1 1/2 cups pre-made edible cookie dough instead if you wish!)

  • 1/4 cup butter softened
  • 1/4 cup brown sugar
  • 2 tablespoons sugar
  • 1 teaspoon vanilla
  • 1/2 cup flour heat-treated (see notes below)
  • 1/4 cup mini chocolate chips

Ice Cream

  • 1 1/2 quarts vanilla ice cream softened
  • One 8-ounce tub whipped topping divided
  • 1/4 cup chocolate syrup

Instructions

Cookie Crust

  • Remove 5 cookies from the package and set them aside for later.
  • Place the rest of the cookies in a food processor and process until there are fine crumbs.
  • Add the 1/4 cup of melted butter and process until it's well-combined.
  • Press into the bottom of an 8×8 or 9×9-inch pan; set aside.

Cookie Dough

  • In a mixing bowl, combine the softened butter, brown sugar and sugar.
  • Add the vanilla and stir until smooth.
  • Add the flour and mini chips and mix.
  • Roll the dough into small (1/2 inch) balls; set aside.

Ice Cream

  • Add the softened ice cream to a large bowl.
  • Add 1/2 of the whipping cream and mix until well-combined.
  • Stir in most of the cookie dough balls (save the rest for later) and pour the mixture over the crust.
  • Drizzle the chocolate syrup over the ice cream and freeze for 8 hours or until solid.
  • Spread the remaining whipped topping over the ice cream and garnish with remaining cookies (crushed) and cookie dough balls.
  • Cut into squares and enjoy!

    Who doesn’t love an ice cream dessert?! This was AMAZING and one of my husband’s favorite! I love the homemade cookie dough pieces spread throughout!
