These Birthday Cake Rice Krispie Treats are soft, gooey, and loaded with colorful sprinkles, marshmallows and vanilla cake batter flavor — like a slice of funfetti cake in chewy, no-bake form!
Kids & adults alike enjoy the tasty twist on the classic dessert!
Ingredients Needed
Butter – I prefer to use salted butter to balance the sweetness.
Marshmallows – Large or regular (mini) marshmallows work great.
Cake Mix – You can use white, Funfetti, yellow or vanilla.
Vanilla Extract – You could also add a little almond extract for more of a “wedding cake” flavor!
Sprinkles – Use sequins or jimmies as they won’t bleed into the marshmallow mixture as others will.
Cereal – I use Rice Krispies, but Special K cereal works great too.
White Chocolate – You can use white chocolate chips or almond bark.
How to Make Birthday Cake Rice Krispie Treats
First, you’ll need to heat-treat the cake mix. The raw flour in cake mix can carry harmful bacteria, so heating it to 160F kills the bacteria, making it safe for no-bake treats, like these!
How to Heat Treat Cake Mix
Spoon the mix onto a microwave-safe bowl or plate.
Microwave on high for about 1 to 1 1/2 minutes, stirring every 30 seconds.
The brownie mix will be warm (needs to be 160F+) and therefore any bacteria present will be no more!
Let the mix cool (place on a cold plate to speed the process up).
Now you can continue with the Rice Krispie treats! Microwave the butter and marshmallows in a large bowl in 30 second increments, stirring after each. It’ll take 2-3 minutes total for everything to be totally melted and smooth. Once smooth, don’t keep it in the microwave any longer…overcooked sugars will form stiff Rice Krispie treats (and we want gooey & delicious!).

Then stir in the cake mix and vanilla extract. Once smooth, add the cereal and sprinkles and carefully stir without crushing the cereal.
Transfer to a greased square pan and spread to an even layer. Drizzle with melted white chocolate and top with additional sprinkles!!
Let the bars cool for 15-20 minutes before cutting and serving….if you can wait!!!
What should I do with the leftover cake mix?
I like to put the rest of the bag of cake mix in a freezer bag, label it and freeze. You can use it a few different ways…
Make Cake Batter Dip! Combine the rest of the box of cake mix (about 3 cups) with an 8-ounce tub of thawed whipped topping, 1 cup of vanilla yogurt and 2 tablespoons of sprinkles and serve with animal crackers!

2ounceswhite chocolate chips or almond bark
Instructions
Grease a square pan (8×8 or 9×9 inch) and set aside.
Spread the cake mix on a microwave-safe plate and spread to an even layer.
1/2 cup cake mix (white, yellow or funfetti)
Microwave on high for 30 seconds; stir and repeat until it's been microwaved a total of 90 seconds. (To be extra safe, scoop the cake mix to a mound in the middle of the plate and take its temperature; you want it to be 160℉ or higher. If it's not, continue to microwave in 30 second increments). Let the cake mix cool.
In a large microwaveable bowl, add the butter and marshmallows.
10 ounces marshmallows, 1/3 cup butter
Cook on high for 3 minutes, stirring every 30 seconds, or until the butter and marshmallows are melted.
Add the vanilla and cake mix; stir well.
1 teaspoon vanilla extract
Stir in the cereal and sprinkles.
4 1/2 cups Rice Krispies cereal, 1/4 cup sprinkles (I recommend using sequins or jimmies)
Pour into the prepared pan then using a greased rubber spatula, press the mixture into the pan.
Melt the white chocolate and drizzle over the Rice Krispie treats; top with more sprinkles if desired.
2 ounces white chocolate chips or almond bark
Let cool, cut into bars and enjoy!
Notes
Make a double-batch and press into a 9×13-inch pan for thick Rice Krispie treats or press into a jellyroll pan for thinner treats.
These make the perfect holiday treat! Use white cake mix and festive colored sprinkles to go with the season!
Rice Krispie treats are best the day you make them. However, if you have extras, keep them covered at room temperature for up to 5 days. (Don’t store in the fridge as they’ll harden too much).
