These Peanut Butter Oreo Brookies have it all! With Oreos and peanut butter in between layers of fudgy brownies and cookies, they’re rich, decadent and ohhhh so delicious!

It’s no secret that I’ve got a HUGE sweet tooth! And most the time you’ll find me cooking and baking from scratch. However, this recipe is SO simple using two package mixes and honestly nobody will ever know you took a couple shortcuts!

When you add peanut butter, candies AND Oreo cookies, there’s so much texture, incredible flavor and color to these easy Brookies!

Ingredients Needed

  • Brownie Mix – I use a simple fudge brownie mix; you could also use milk or dark chocolate brownie mix.
  • Cookie Dough Mix – I typically use chocolate chip cookie dough, but you could use peanut butter cookie dough mix instead!
  • Ingredients needed to prepare mixes – Most box mixes call for vegetable oil (or butter), eggs and/or water.
  • Oreo Cookies – Regular, double-stuff, peanut butter…whatever you’d like!
  • Peanut Butter – I use creamy peanut butter, but chunky peanut butter is fine too.
  • Reeses Pieces Candy

How to make Peanut Butter Oreo Brookies

You’ll start by mixing up a box of brownie mix and a pouch of chocolate chip cookie dough. Mix as instructed on the packages and set aside.

Now, it’s time to layer it up! Pour the brownie mix into the bottom of a 9×13 inch baking pan and spread to an even layer. I like to use parchment paper for easy removal.

Dollop the peanut butter over the brownie batter and use a butter knife to swirl it around a bit. Sprinkle half of the Reeses candies on top, then break twelve of the Oreos in half and scatter them atop the dessert.

Spoon the chocolate chip cookie dough on top, followed by the remaining Oreos and candy pieces. Use your palms to press the cookies and candies into the dough a bit. Time to bake!!

Bake these until they’re golden brown around the edges and just set in the center. Be sure not to overtake them or they’ll be dry. The bars will set up nicely as they cool.

Cut into squares once cool. I like to cut them into small squares as they’re quite rich! Though…everyone seems to come back for seconds and thirds! 🙂

Tasty Variations

I love finding new variations for desserts and this one is no exception! Whether you don’t have an ingredient on hand or want to try something different, here are a few ideas!

  • Peanut Butter Lover Oreo Brookies – Use peanut butter cookie dough and peanut butter Oreos in addition to the peanut butter and Reeses Pieces!
  • Nutella Brookies – Use chocolate chip cookies dough, Nutella in place of the peanut butter, regular or hazelnut spread M&M’s and regular or Nutella Oreos!
  • Chocolate Lover Peanut Butter Oreo Brookies – Use double chocolate cookie dough, creamy peanut butter, Reeses Pieces or M&M’s and regular or chocolate-filled Oreos!

How should brookies be stored?

You can store these at room temperature for up to 5 days or in the freezer for up to 2 months. Be sure to store nice and tight in an airtight container or in freezer bags.

What brand of brownie mix is best?

Ghirardelli brownie mix is definitely my favorite but I can’t always find it at my local grocery store.

Why did my Peanut Butter Oreo Brookies come out dry?

These brookies should be moist and dense! However, if they’re overbaked, they will dry out and be less fudgy & delicious! If they seem to be browning on top before they’re full cooked in the center, cover the pan with aluminum foil until done. This will prevent them from browning too much.

Equipment

Ingredients
 

  • 1 box (16.5 ounces)* brownie mix plus ingredients called for on box, likely eggs, oil and water
  • 1 package (17.5 ounces) chocolate chip cookie dough mix plus ingredients called for on package, likely butter, water and an egg
  • 1/2 cup peanut butter
  • 1/2 cup Reeses Pieces
  • 16 Oreo cookies halved

Instructions

  • Preheat oven to 350℉ and grease a 9×13-inch pan with cooking spray.
  • Prepare the brownie mix according to package instructions; set aside.
    1 box (16.5 ounces)* brownie mix
  • Prepare the cookie dough mix according to package instructions; set aside.
    1 package (17.5 ounces) chocolate chip cookie dough mix
  • Spread the brownie batter into the bottom of the prepared pan.
  • Dollop the peanut butter onto the brownie batter and swirl with a toothpick or butterknife.
    1/2 cup peanut butter
  • Sprinkle with half of the Reeses Pieces followed by 12 of the Oreos (halved or coarsely chopped).
    1/2 cup Reeses Pieces, 16 Oreo cookies
  • Spoon the cookie dough on top.
  • Top with remaining Oreos and Reeses Pieces; press down gently.
  • Bake for 25-28 minutes or until golden brown around the edges. Do not overbake.
  • Let cool and enjoy.

Notes

*Brownie mix sizes vary greatly.  Anything 16 – 18.5 ounces will work fine.
You don’t want to over-bake these or they’ll go from fudgy and delicious to slightly dry and crumbly.  You can always finish baking them with aluminum foil on top if the edges are browning before the rest of the pan is done.
