Cheesy Chicken Cobbler

This Cheesy Chicken Cobbler is the quintessential comfort food!! With chicken, veggies, a cheesy sauce and buttery biscuits, it’s a full meal in one the whole family will love!

Back in 2023 there was a recipe that went viral on TikTok called “Chicken Cobbler.” I love good comfort food and let’s be honest…anything is better with a buttery biscuit! I changed up the recipe to add a little extra cheesiness and gave more structure to the biscuit topping (vs a runny batter).

The results are SO DELICIOUS. And I love that it’s made with simple ingredients that are easy to find …and is really a full meal in one dish!! You’ve got the protein, the veggies, carbs – pair it with a side salad or fresh fruit and dinner is served!

Ingredients Needed

  • Salted Butter
  • Cooked Chicken – I like using shredded rotisserie chicken for this! You could also use cooked chicken breasts (diced), leftover grilled chicken, etc.
  • Frozen Vegetables – Mixed vegetables is my preference, but you could opt to use just peas, peas & carrots, etc.
  • Shredded Cheese – I use shredded cheddar; Colby jack would work great, too!
  • Cheddar Biscuit Mix – The boxed Red Lobster Cheddar Bay Biscuit Mix is my favorite!
  • Water
  • Chicken Broth – Regular or low sodium is fine.
  • Milk – Any milk is fine (skim, 1%, 2%, whole or a milk alternative that’s unsweetened).
  • Condensed Soup – I like to use a can of cream of chicken and a can of cheddar soup mix; if you can’t find the cheddar soup mix, use an additional can of cream of chicken (or cream of mushroom or celery!)

How to Make Chicken Cobbler

It’s super duper easy! Start by adding the melted butter to a casserole dish. I typically use a ceramic baking dish, but glass would work great, too! (If you use metal, I’d recommend greasing the dish and decreasing the bake time a smidge.)

I find it easiest to melt the butter and dump it in, but you could also place the 1/2 stick of butter in the empty dish and put it in the hot oven until melted.

Next you’ll add the layer of cooked chicken followed by the vegetables and 1/2 of the cheese.

Now it’s time to mix up the biscuity topping! Add the biscuit mix, garlic seasoning packet, water and remaining cheese to a bowl and stir until combined. Don’t over-mix (if you do, there will be too much gluten development which can result in tough biscuits). The dough will be very soft.

Scoop the biscuit dough into the casserole dish – I use a large cookie scoop and get about 8 scoops. You could certainly use a smaller scoop and do more dollops, if you prefer!

Lastly, you’ll whisk together the remaining ingredients and pour it over the casserole. Be sure to drizzle it over all of the biscuits – it adds such great flavor to the biscuits and creates that “cobbler” feel you’re going for!

Time to bake! Toss it in a preheated over for 50-55 minutes or until the biscuits are golden brown around the outside and the gravy is bubbly!

Let the casserole cool for a few minutes. This allows for the gravy/sauce mixture to set up just a bit….and makes it less likely to burn your mouth on the piping hot filling. ha!

Can Cheesy Chicken Cobbler be made ahead of time?

You can make this up to 24 hours before baking. Once it’s ready, cover with plastic wrap and refrigerate until ready to bake.

NOTE: You may notice that the biscuits don’t rise as much as they would if you bake right away. This is because the leavening agents in the biscuit mix react with the water in the batter and produce carbon dioxide….when you start this reaction and wait to bake, the leavening agents lose their effectiveness over time.

What side dishes go with chicken cobbler?

With this casserole being a really hearty dish, you really don’t need much to go along with it! I like to keep it simple with a green side salad (especially if garden lettuce is in season!) or a bowl of fresh fruit!

Ingredients
 

  • 1/4 cup butter melted
  • 4 cups cooked & shredded chicken
  • 1 12-ounce bag frozen mixed vegetables about 2 cups
  • 1 cup shredded cheddar cheese divided
  • 1 11.3-ounce box cheddar biscuit mix
  • 1 cup water
  • 1 cup chicken broth
  • 1 cup milk
  • 1 10.5-ounce can cream of chicken soup
  • 1 10.5-ounce can cheddar cheese soup

Instructions

  • Preheat oven to 350โ„‰.
  • Pour the melted butter into the bottom of a 9×13 casserole dish and spread to an even layer.
    1/4 cup butter
  • Add the chicken and spread to an even layer, followed by the vegetables and 1/2 cup of the cheese; set aside.
    4 cups cooked & shredded chicken, 1 12-ounce bag frozen mixed vegetables, 1 cup shredded cheddar cheese
  • In a mixing bowl, combine the biscuit mix, the seasoning packet from the biscuit mix, water and remaining 1/2 cup of cheese.
    1 11.3-ounce box cheddar biscuit mix, 1 cup water
  • Scoop the biscuit dough into the casserole dish.
  • In a separate bowl whisk together the broth, milk and soups.
    1 cup chicken broth, 1 cup milk, 1 10.5-ounce can cream of chicken soup, 1 10.5-ounce can cheddar cheese soup
  • Pour over the biscuits.
  • Bake for 50-55 minutes or until the biscuits are golden brown and the edges are bubbly.
  • Remove from the oven and let cool for 5-10 minutes.
  • Top with parsley, if desired and enjoy!

Notes

  • If you can’t find cheddar soup mix, you can use an additional can of cream of chicken soup mix.
  • I use the Red Lobster Cheddar Bay Biscuit Mix (which has a seasoning packet in the box). ย If you can’t find this mix, there are a couple other garlic cheddar biscuit mixes on the market (Pillsbury & Bisquick). ย As long as you use the same amount, it should be fine!ย
