Ingredients Needed
- Pitted Dates – Dates are inexpensive, naturally sweet, and sticky, making them the ideal base for these energy bites! You can typically find them in the grocery store by the dried fruits (raisins, etc).
- Cocoa Powder – Just the regular Hershey’s or Nestle unsweetened cocoa powder.
- Graham Crackers – These add classic s’mores flavor and a textural element! Use gluten-free graham crackers, if desired.
- Mallow Bites – It’s not a s’more without a marshmallow component! These dehydrated marshmallows are a great addition (though regular marshmallows can work, too).
- Mini Chocolate Chips – You’ll love the little bit of crunch and extra chocolate the mini chips add!
- Chia Seeds – Optional, but adds a boost of nutrition! They add plant-based protein, fiber, and omega three fatty acids!

How to Make S’mores Energy Bites
First up, gather the ingredients and make sure the pitted dates you have are nice and soft! You want them to be really soft so they’ll break down easily and stick the energy bite mixture together. If they seem dried out, no worries!
To soften the pitted dates, submerge them in a bowl of bowling water. Cover with plastic wrap (or a lid) and let set for 10-15 minutes. This will soften them right up!


A food processor is a must when working with dates to help break them down into a smooth paste!
Then add the dates, graham crackers, oats, and chia seeds (optional) to a food processor. Blend until the dates are broken down and the mixture is sticky. You want to be able to form a ball with the mixture in your hands. It does take a bit in the food processor, so if it’s not quite ready, keep blending.


Next, you’ll add the cocoa powder. If the mixture is getting a little dry, you can add a few more dates or a drizzle of honey to make it all stick together!
Now transfer the mixture to a bowl and stir in the mallow bits and mini chocolate chips….remember I said this is a healthy-ish snack, not a health food, ha!


Grab about 2 tablespoons (not packed tightly) and roll it into a nice ball. I find it easiest to use a cookie scoop so you have evenly sized energy bites. While they’re nice and sticky, roll them into crushed graham crackers!

Yes! I tried this and though I enjoyed it, the peanut butter makes them a bit more crumbly (vs a little more chewy). Decrease the dates to 1 1/2 cups and add up to 1/2 cup of peanut butter. If it makes them too gooey, add additional graham cracker crumbs until they’re easy to roll into balls.
I can usually find the Mallow Bits in the “coffee/hot cocoa” aisle of the grocery store by the hot cocoa packets or in the marshmallow aisle. If you can’t find them, you can use mini marshmallows instead.
