A cheesy garlic roll that has started unrolling with cheese stringing out.

We all love a classic homemade dinner roll next to a plate of spaghetti or warm bowl of soup, but what if we rolled ’em up with some butter, garlic and cheese before baking?! Yeah, I know, sounds amazing right?! Give ’em a try – you’ll be glad you did!!!

The 6 ingredients needed to make cheesy garlic rolls on a white background with labels.

Ingredients Needed (amounts in the recipe card below)

  • Bread Dough – You’ll need a one pound loaf; I recommend Rhodes brand, which comes in an orange and blue bag in the freezer section (they come in 3 count and 5 count bags). I’ve also tested this recipe with a 13.8 ounce tube of pizza crust dough which worked well too!
  • Butter – You’ll want to make sure the butter is softened before using. I prefer salted butter for this recipe.
  • Minced Garlic – You can used minced garlic or garlic powder; see notes in the recipe card.
  • Mozzarella Cheese – I always prefer using a block of cheese and shredding it myself. The bagged shredded cheese has an anti-caking agent added, which keeps the cheese from sticking together, but it also doesn’t melt as nicely.
  • Parmesan Cheese – I use grated, but shredded will work fine too.
  • Parsley – Dried or fresh is great!

How to Make Cheesy Garlic Rolls

Before you begin, make sure your bread dough is completely thawed. The bag of frozen bread dough will give you instructions – it’ll likely take about 4 hours. While the bread is thawing, I also recommend setting the butter out so it’s easy to work with when needed.

Bread dough thawed and rolled out to a rectangle.

Roll the dough out to a large rectangle with a rolling pin.

Spread the butter over the dough followed by the garlic.

Next, you’ll add mozzarella, parmesan and parley.

Roll up the dough tightly. Cut the log of dough into 9 equal pieces (about 1 1/2 inches each). I like to cut it in three equal pieces then cut each of those into three to create nine.

Place the rolls on a prepared pan. There should be a little space between each of the rolls so there’s room to grow.

Top with the remaining cheeses and bake! You’ll know the rolls are done when the tops are golden brown and the center roll is completely baked through. You can double-check by using an instant read thermometer to ensure the dough has reached 190F.

Remove from the oven and let cool for a few minutes before enjoying.

Serving Suggestions

These rolls are a great as an appetizer, snack or side dish for almost any meal! I especially love them on game day, pasta night and with pretty much any kind of soup or chowder!

They’re super tasty paired with my corn chowder …or try scooping up every last drop of ravioli soup from your bowl with them! YUMMMMM.

Storage Instructions

  • On the Counter – Let the rolls cool completely then cover with plastic wrap or place in a resealable bag. Store at room temperature for 2-3 days.
  • In the Fridge – Because of the cheese, if you’re going to have these for longer than 48 hours, I do recommend keeping them in the fridge for up to 5 days. Simply pop in the microwave for a few seconds to warm before enjoying!
  • In the Freezer – Yes, you can freeze them! Freeze for up to 2 months.

Equipment

  • 1 square baking pan*

Ingredients

  • 1 pound bread dough
  • 1/4 cup butter softened
  • 1 teaspoon minced garlic*
  • 1 cup shredded mozzarella cheese divided
  • 1/4 cup grated parmesan cheese divided
  • 1 teaspoon chopped parsley

Instructions

  • *Before starting, make sure you have the frozen bread dough completely thawed as instructed on the package.
  • Grease a 9×9-inch square baking pan with cooking spray and preheat the oven to 350℉.
  • Place the thawed bread dough on a clean surface and roll it out to a rectangle (around about 14 inches by 10 inches).
    1 pound bread dough
  • Spread the softened butter on top of the dough.
    1/4 cup butter
  • Sprinkle the garlic on top of the butter. (Spread it out if needed.)
    1 teaspoon minced garlic*
  • Top with 3/4 cup shredded mozzarella, 3 tablespoons of the parmesan and the parsley.
1 cup shredded mozzarella cheese, 1/4 cup grated parmesan cheese, 1 teaspoon chopped parsley
  • Roll the dough up nice and tight then use a serrated knife to cut the log into 9 equal-sized slices.
  • Place the rolls in the prepared pan (three rows of three).
  • Sprinkle with remaining cheeses then bake for 22-25 minutes.
  • Enjoy warm!

Notes

*If you don’t have fresh minced garlic, you can use 1/4 teaspoon of granulated garlic instead.
*I use a 9×9 inch square baking dish.  If you don’t have a 9-inch square pan, you could use a 7×11-inch pan.
*I also tested this recipe with a 13.8 ounce tube of refrigerated pizza dough and it turned out great (though I still prefer the frozen bread dough!).
